What you’ll need: muffin pan, Pam spray, ground beef, 6 scallions, Pepperidge Farms pastry puff sheet, shredded Colby & Monterrey Jack cheese, shredded lettuce, salsa, taco seasoning, Uncle Ben’s microwavable roasted chicken flavored rice, and refried beans or black beans.
Preheat oven to 400 degrees.
Remove Pastry puff from freezer and allow to thaw 20 minutes at room temperature.
Slice up scallions and brown with ground beef. Drain fat. Add taco seasoning, following the directions on the taco seasoning packet.
On a lightly floured surface, cut pastry sheet in thirds. Cut each third into 3 squares as well.
Roll each pastry square out enough to flatten it and stretch it a small amount. Lightly coat muffin tin with Pam spray and place each pastry puff square into tin, forming a cup.
In each “cup” place 1 heaping tbsp. of ground beef, 1 tsp. shredded cheese, 1 tsp. of refried beans or black beans.
Bake for ten minutes at 400 degrees. Microwave rice according to package directions.
After ten minutes, remove taco cups from oven. Top each “cup” with 1 tbsp. salsa, tbsp. rice, & shredded lettuce.
