Apple Dumplings with a Sweet Vanilla Sauce

Apple Dumplings are so good! 
In hubby’s words, they were “Ahhhhmazing!” haha! 

Monsoon rain was closing in, I thought it would be a perfect day to bake!
What you’ll need to make dumplings:
 
(my recipe yielded 3 dumplings)
red delicious apples, peeled and cored
water
flour
butter 
ground cinnamon
white sugar
brown sugar
corn starch
vanilla extract
egg whites (2 eggs)
Dough Recipe:
1 1/4 c. all purpose flour
1/4 tsp salt (optional. I omit it)
1/2 c. butter, chilled & diced
1/4 c. ice water
 
Mix together well with a mixer until it forms into dough consistency. Refrigerate for an hour. It will be less sticky and easier to roll when chilled. If the dough feels sticky after being refrigerated, slowly knead in small amounts of flour until it is no longer sticky. I divided the dough into 3 pieces and rolled each out, one at a time.
 
Once rolled out, use a pastry brush to brush on egg white to the dough. Sprinkle on 1 tsp. cinnamon and white sugar, covering dough.
 
Peel and core 4 apples.
 
Place an apple in the center and I sprinkled a ring of cornstarch (1 tsp.) around the outside of the apple.
 
Inside the apple place 1/2 tsp butter, 1 tsp. brown sugar, and 1/2 tsp cinnamon.
 
Pull a corner of the dough up and grab the opposite corner. Pinch dough to close it. Do the same with the remaining 2 corners. Spray 9 x1 3 glass pan with Pam spray &  put apples in pan.
Brush outside dough with egg white, sprinkle with another tsp. of  white sugar and cinnamon.
 
Syrup recipe:
 
3/4 stick of butter
3 cups water
2 c. white sugar
3 tsp. vanilla extract
 
Boil for 5-10 minutes. Pour over each dumpling. I also placed enough to cover the bottom of my 9×13 glass pan. 
Bake at 400 degrees for 60 minutes. Serve warm!
