Bacon Egg Breakfast in Pastry Puff Cups

What you’ll need:

Pam spray

1 sheet Pepperidge Farm Pastry Puff Sheets

6 scallion, diced

1/2 green pepper, cut up

microwavable bacon

6 eggs

1 bag Simply Potatoes, steakhouse diced potatoes

Shredded Cheddar Cheese


Preheat oven to 400 degrees.

Remove Pastry puff from the freezer and allow to thaw 20 minutes at room temperature.

Scramble eggs with green pepper and onions.

In a skillet, fry the bag of potatoes.

microwave bacon & crumble.

On a lightly floured surface, cut pastry sheet in thirds. Cut each sheet into 3 squares as well.

Layer all ingredients into breakfast cups, 1 tbsp. each until cups are full. Top with a sprinkle of cheese.

Bake for 10 minutes and serve.
